Perfect BBQ Side Dish: Pit Beans

Hey! I’m Matt with Meat Church. Tonight, we’re smoking pit beans. 🎵

Well, we’re back in my outdoor kitchen at night because it’s over 100 degrees in Texas. As you can see, by the end of this video, I will definitely sweat through this shirt. And the nighttime also helps keep the flies at bay. What we’re making as a side today is a very, very good side. Don’t sleep on it! I usually hear you guys asking for more sides and desserts. We just released chocolate pecan cobbler a few weeks ago, and shockingly, you actually blew that video up! So, we made sweet coleslaw along with North Carolina pulled pork a few weeks back. That was my buddy Michael Lechworth’s recipe, and hey, we’re gonna keep it the same and do another Michael recipe today.

The history of this comes from the legendary Skylight Inn in North Carolina. They’ve been cooking this forever. If you know eastern North Carolina-style barbecue, you definitely know Sam Jones and his family, and that’s where this recipe comes from. It’s super simple. So let’s jump into it.

So, it’s very basic. We’re going to sauté half a bell pepper and half of a sweet onion. But the key here is that we’re going with one 3-pound, 3.7-ounce can of Bush’s Baked Beans. For this size can, all you need is one pound of ground beef, the half bell pepper, the half onion, and 16 ounces of sweet barbecue sauce. That’s it, along with some seasoning. Super simple!

We’re going to jump over here to a grill… [Music]… Put a little oil in the pan and cook these onions and bell pepper till they’re translucent. Then drop in the ground meat. Use your favorite barbecue seasoning. I’m using our Gospel, which is kind of our OG all-purpose best seller in barbecue. We’re just going to keep cooking this away until the meat is completely browned. Then, we’re going to add the beans and move on to the next step.

Alright, that looks nice and brown. Let’s move on to the next step. Clearly, you can make this whenever you want. I’m using the new Yeti cast iron skillet. A lot has been made of this skillet… [Music]… I mentioned earlier, 16 ounces of your favorite sweet barbecue sauce. Naturally, I’m going to use Sam Jones since it’s their recipe. We sell this at Meat Church Barbecue Supply in Waxahachie. Then, add the entire can of beans and mix it up. Add a little more barbecue seasoning and put it in the pit. Here’s a great thing about this: all you gotta do is heat this up, but you could also cook this half the dang day if you want to. When it comes to cooking, what temperature, you know, how are you going to do this… [Music]… So, in the pit we go, and I will see you all when it’s warm and time to eat!

It’s been about 45 minutes, and I like to get in and stir periodically. Whatever you like, 30 minutes, 45 minutes, every hour, or something like that. We’ve been cooking the beans for about two hours. Let’s go ahead and pull them out! Heavy and hot… I’ve let them cool off somewhat. They smell amazing, by the way.
