Traditional Barbecue Chicken

[matched_content] Hey, welcome back to “How to Barbecue Right”! I’m Malcolm Reed, y’all. I don’t know about you, but in summertime and grilling season, I always crave some good ol’ barbecue chicken. Today, I’m cooking up some old-fashioned style chicken over hot coals and caramelizing some sauce on it at the end. It’s going to be delicious and bring back memories of family reunions and picnics. Let’s get cooking!

I’ve got an eight-piece chicken snack here, but you can use any parts you prefer. I’m starting by making a barbecue brine with fresh lemon juice, a bottle of barbecue marinade, vinegar, water, and spices. After soaking the chicken in the brine for 2 hours, I’m setting it on a rack to dry out for 30 minutes.

Once the chicken has soaked up the flavors, I’m seasoning it with my hot barbecue rub. Then, it’s time to cook the chicken on a two-zone setup in my Primo ceramic Grill. After about an hour, I start glazing the chicken with a mix of barbecue sauces and hot sauce for some sweetness and heat.

After giving the chicken a good sear over hot coals, it’s time to move it to the cool side of the grill and let it finish cooking. Once the internal temperature reaches 160°F, it’s time to enjoy some delicious barbecue chicken. This recipe is easy and perfect for any gathering.
