So how did they go from not even being open to being number one in Texas? Where did they even start? Well, it starts at 5 a.m. It’s also really cold out – apparently, you have to get up really early to make good barbecue. It seems like that’s a common thread every time I film a barbecue spot. I’m excited to figure out why Goldie’s is Texas’s number one barbecue and what their secrets are.
Goldie’s is only open 3 days a week, but the team is here all week long prepping and getting ready for the weekend. This is Jaylen and Lane, they’re both the pitmasters at Goldie’s and have managed to create one of the most special places in all of Texas. They go way back and take turns working the morning shift and night shift so they can continue to smoke around the clock.
Jaylen started off the morning with the ribs and the seasoning. They use a seasoned salt that includes garlic powder, onion powder, salt, a little cayenne, and paprika. After prepping the ribs, they were ready to go in the smoker. They also prep turkeys with an all-purpose rub that is good for turkeys and pork belly.
Lane shares that they have been making barbecue for almost years after high school. They all moved out to Austin together, tried going to school there, but it didn’t work out. They then started getting into barbecue and eventually saved up enough money to open up Goldie’s.
After everything goes onto the pits, it’s time to start on the briskets. They season the briskets with a seasoned salt and table salt to make it a bit saltier. I try my hand at seasoning a brisket and quickly realize it’s harder than it looks.
When we got to Goldie’s around 4:30 a.m., we noticed a camper parked outside. The person inside had camped overnight just to be the first in line. The team was grinding in the back, working on sides and testing meats on the smoker. Everything they do at Goldie’s is made from scratch, including the bread they serve with the barbecue.
The friendship that Jaylen and Lane have has really helped create a great culture at Goldie’s. The line outside is getting bigger as the team prepares for service. As the doors open, the floodgates open and the passionate team and customers come together to enjoy the best barbecue in Texas.
