Ingredients

  • 1 cup soy sauce low-sodium recommended
  • 1/2 cup brown sugar packed
  • 1/4 cup rice vinegar
  • 3 tablespoons sesame oil
  • 2 tablespoons gochujang Korean chili paste
  • 1 tablespoon minced fresh ginger
  • 4 cloves garlic minced
  • 3 green onions finely chopped
  • 1 tablespoon toasted sesame seeds
  • 1/2 teaspoon black pepper
  • 1 Asian pear grated (optional but recommended for authentic tenderizing)

Method

  1. In a medium bowl, whisk together the soy sauce and brown sugar until the sugar is completely dissolved.
  2. Add the rice vinegar, sesame oil, and gochujang, whisking continuously to create a smooth mixture.
  3. Stir in the minced ginger, garlic, green onions, sesame seeds, and black pepper.
  4. If using, fold in the grated Asian pear (this natural tenderizer is a secret ingredient in many authentic Korean BBQ recipes).
  5. For the best flavor, let the marinade rest for at least 30 minutes before using to allow the flavors to meld.
  6. Use immediately or store in an airtight container in the refrigerator for up to 1 week.
