Ingredients
  

  • pounds ribeye or sirloin beef thinly sliced
  • cup soy sauce
  • 3 tablespoons brown sugar
  • 2 tablespoons sesame oil
  • 4 cloves garlic minced
  • 1 tablespoon freshly grated ginger
  • 2 tablespoons Asian pear grated (or substitute apple)
  • 3 green onions chopped
  • 1 tablespoon rice vinegar
  • 1 tablespoon toasted sesame seeds plus more for garnish
  • ¼ teaspoon black pepper
  • 1 tablespoon neutral cooking oil for cooking

Method
 

  1. Prepare the beef: If not pre-sliced, partially freeze beef for 30 minutes and slice as thinly as possible against the grain.
  2. Make the marinade: In a large bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, grated Asian pear, chopped green onions, rice vinegar, sesame seeds, and black pepper. Whisk until sugar is dissolved.
  3. Marinate the beef: Add sliced beef to the marinade and mix thoroughly to ensure all pieces are well-coated. Cover and refrigerate for at least 1 hour, preferably 4 hours or overnight for maximum flavor.
  4. Cook the bulgogi: Heat a large skillet or wok over high heat. Add cooking oil and swirl to coat. Working in batches to avoid overcrowding, cook the marinated beef for 2-3 minutes until caramelized and just cooked through.
  5. Serve: Transfer to a serving plate, garnish with additional sesame seeds and sliced green onions. Serve immediately while hot.
