Ingredients
  

  • pounds thinly sliced ribeye or sirloin beef
  • cup soy sauce
  • 3 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 4 cloves garlic minced
  • 1 tablespoon freshly grated ginger
  • 2 tablespoons Asian pear grated (or substitute with regular pear)
  • 3 green onions thinly sliced
  • 1 tablespoon rice wine mirin
  • ½ teaspoon black pepper
  • 1 tablespoon toasted sesame seeds

Method
 

  1. Slice your beef as thinly as possible (freezing it for 30 minutes prior to slicing helps). If not pre-sliced, aim for pieces about 1/8 inch thick.
  2. In a large bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, grated Asian pear, sliced green onions, rice wine, and black pepper. Whisk until sugar is dissolved.
  3. Add the beef slices to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 1 hour (overnight is ideal for maximum flavor).
  4. Heat a large skillet or wok over high heat. Working in batches to avoid overcrowding, cook the marinated beef for 2-3 minutes until the edges are caramelized and the beef is just cooked through.
  5. Sprinkle with toasted sesame seeds and additional sliced green onions before serving.
  6. Serve hot with steamed rice, lettuce leaves for wrapping, and traditional Korean side dishes (banchan) like kimchi.
