- Slice your beef as thinly as possible (freezing it for 30 minutes prior to slicing helps). If not pre-sliced, aim for pieces about 1/8 inch thick.
- In a large bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, grated Asian pear, sliced green onions, rice wine, and black pepper. Whisk until sugar is dissolved.
- Add the beef slices to the marinade, ensuring each piece is well coated. Cover and refrigerate for at least 1 hour (overnight is ideal for maximum flavor).
- Heat a large skillet or wok over high heat. Working in batches to avoid overcrowding, cook the marinated beef for 2-3 minutes until the edges are caramelized and the beef is just cooked through.
- Sprinkle with toasted sesame seeds and additional sliced green onions before serving.
- Serve hot with steamed rice, lettuce leaves for wrapping, and traditional Korean side dishes (banchan) like kimchi.
