Ingredients
  

  • pounds ribeye steak thinly sliced
  • cup soy sauce
  • 3 tablespoons brown sugar
  • 1 tablespoon sesame oil
  • 3 cloves garlic minced
  • 1 tablespoon freshly grated ginger
  • 2 tablespoons Asian pear grated (or substitute apple)
  • 2 green onions thinly sliced
  • 1 tablespoon toasted sesame seeds
  • ¼ teaspoon black pepper
  • 1 tablespoon neutral oil for cooking

Method
 

  1. Freeze the beef for 30 minutes to firm it up, then slice it across the grain into very thin pieces (about 1/8 inch thick). Set aside.
  2. In a large bowl, combine soy sauce, brown sugar, sesame oil, minced garlic, grated ginger, Asian pear, half of the green onions, half of the sesame seeds, and black pepper. Whisk until sugar dissolves.
  3. Add the sliced beef to the marinade and mix well to ensure all pieces are evenly coated. Cover and refrigerate for at least 1 hour, preferably 4 hours, or overnight for maximum flavor.
  4. When ready to cook, heat a large skillet or wok over high heat. Add the oil and swirl to coat.
  5. Working in batches to avoid overcrowding, use tongs to place a single layer of beef in the hot pan. Cook for 1-2 minutes per side until the meat is caramelized and cooked through.
  6. Transfer cooked beef to a serving plate and repeat with remaining meat.
  7. Garnish with remaining green onions and sesame seeds before serving.
