- Pat the chuck roast dry with paper towels. Season generously with garlic powder, onion powder, salt, and pepper on all sides.
- Heat olive oil in a large skillet over medium-high heat. Sear the seasoned roast on all sides until nicely browned, about 2-3 minutes per side.
- Transfer the seared roast to your slow cooker.
- In a medium bowl, mix together BBQ sauce, brown sugar (if using), Worcestershire sauce, and apple cider vinegar. Pour this mixture over the roast.
- Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours, until the meat is fork-tender and easily shreds.
- Once done, remove the roast to a large plate or cutting board and shred with two forks, discarding any large pieces of fat.
- Skim excess fat from the sauce in the slow cooker, then return the shredded meat to the sauce and stir to combine.
- Allow the meat to absorb the sauce for about 15-20 minutes before serving.
