Ingredients
  

  • 1 3-pound boneless chuck roast
  • 1 tablespoon olive oil
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 cups quality bottled BBQ sauce
  • 1/4 cup brown sugar optional
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon apple cider vinegar

Method
 

  1. Pat the chuck roast dry with paper towels. Season generously with garlic powder, onion powder, salt, and pepper on all sides.
  2. Heat olive oil in a large skillet over medium-high heat. Sear the seasoned roast on all sides until nicely browned, about 2-3 minutes per side.
  3. Transfer the seared roast to your slow cooker.
  4. In a medium bowl, mix together BBQ sauce, brown sugar (if using), Worcestershire sauce, and apple cider vinegar. Pour this mixture over the roast.
  5. Cover and cook on LOW for 7-8 hours or on HIGH for 4-5 hours, until the meat is fork-tender and easily shreds.
  6. Once done, remove the roast to a large plate or cutting board and shred with two forks, discarding any large pieces of fat.
  7. Skim excess fat from the sauce in the slow cooker, then return the shredded meat to the sauce and stir to combine.
  8. Allow the meat to absorb the sauce for about 15-20 minutes before serving.
