Ingredients
  

  • 3-4 pound pork loin boneless
  • 1 cup root beer
  • 1 cup quality BBQ sauce plus extra for serving
  • 2 tablespoons brown sugar
  • 1 tablespoon smoked paprika
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon mustard powder
  • 1/2 teaspoon cayenne pepper
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons apple cider vinegar
  • 8 hamburger buns for serving optional
  • Coleslaw for topping optional

Method
 

  1. In a small bowl, mix the brown sugar, smoked paprika, garlic powder, onion powder, mustard powder, cayenne pepper, salt, and black pepper to create a dry rub.
  2. Pat the pork loin dry with paper towels, then thoroughly coat all sides with the spice rub, pressing it into the meat.
  3. Place the seasoned pork loin in the crock pot.
  4. Pour the root beer around (not over) the pork loin to avoid washing off the spice rub.
  5. Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours, until the pork is very tender and easily pulls apart with a fork.
  6. Once done, carefully transfer the pork to a large cutting board or plate, reserving about 1/4 cup of the cooking liquid.
  7. Using two forks, shred the pork, removing any fatty pieces.
  8. Return the shredded pork to the slow cooker. Add BBQ sauce, apple cider vinegar, and the reserved cooking liquid. Stir to combine.
  9. Cover and cook on LOW for an additional 30 minutes to allow the flavors to meld.
  10. Serve on toasted buns topped with coleslaw if desired, or alongside your favorite sides.
