- In a small bowl, mix the brown sugar, smoked paprika, garlic powder, onion powder, mustard powder, cayenne pepper, salt, and black pepper to create a dry rub.
- Pat the pork loin dry with paper towels, then thoroughly coat all sides with the spice rub, pressing it into the meat.
- Place the seasoned pork loin in the crock pot.
- Pour the root beer around (not over) the pork loin to avoid washing off the spice rub.
- Cover and cook on LOW for 7-8 hours or HIGH for 4-5 hours, until the pork is very tender and easily pulls apart with a fork.
- Once done, carefully transfer the pork to a large cutting board or plate, reserving about 1/4 cup of the cooking liquid.
- Using two forks, shred the pork, removing any fatty pieces.
- Return the shredded pork to the slow cooker. Add BBQ sauce, apple cider vinegar, and the reserved cooking liquid. Stir to combine.
- Cover and cook on LOW for an additional 30 minutes to allow the flavors to meld.
- Serve on toasted buns topped with coleslaw if desired, or alongside your favorite sides.
