Ingredients

  • 4 whole skin-on bone-in chicken breasts (about 2-3 pounds total)
  • 1 cup of your favorite BBQ sauce plus extra for basting
  • 2 tablespoons olive oil
  • 1 tablespoon brown sugar
  • 2 cloves garlic minced
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon cayenne pepper optional

Method

  1. Preheat your oven to 375°F (190°C). Line a baking dish with aluminum foil for easier cleanup.
  2. In a small bowl, mix together olive oil, minced garlic, paprika, onion powder, salt, pepper, and cayenne (if using).
  3. Pat the chicken breasts dry with paper towels. This helps the seasoning stick better and promotes browning.
  4. Rub the spice mixture all over the chicken breasts, making sure to get some under the skin for maximum flavor.
  5. Place the seasoned chicken breasts in the prepared baking dish, skin side up, leaving a little space between each piece.
  6. Bake for 25 minutes to get the chicken started cooking.
  7. Remove from oven and brush each chicken breast generously with BBQ sauce. Return to the oven.
  8. Bake for another 15 minutes, then brush with another layer of BBQ sauce.
  9. Continue baking for 5-10 more minutes, until the chicken reaches an internal temperature of 165°F (74°C) and the BBQ sauce is sticky and caramelized.
  10. Let the chicken rest for 5 minutes before serving to allow the juices to redistribute.
