Ingredients

  • 4 whole skin-on bone-in chicken breasts (about 3 pounds total)
  • 1 cup of your favorite BBQ sauce plus extra for basting
  • 2 tablespoons olive oil
  • 1 tablespoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper optional, for heat

Method

  1. Preheat your oven to 375°F (190°C) and line a baking dish with aluminum foil for easier cleanup.
  2. In a small bowl, combine paprika, garlic powder, onion powder, salt, pepper, and cayenne (if using).
  3. Pat the chicken breasts dry with paper towels. This helps the seasoning stick and promotes better browning.
  4. Brush the chicken with olive oil, then sprinkle evenly with the spice mixture, making sure to season both sides.
  5. Place the chicken breasts skin-side up in the prepared baking dish, leaving a little space between each piece.
  6. Bake for 25 minutes, then remove from the oven.
  7. Brush each chicken breast generously with BBQ sauce, making sure to coat all sides.
  8. Return to the oven and bake for an additional 15-20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the BBQ sauce has caramelized.
  9. For extra caramelization, broil for the last 2-3 minutes, watching carefully to prevent burning.
  10. Remove from oven and let rest for 5 minutes before serving.
  11. Serve with additional warmed BBQ sauce on the side.
