Easy Oven-Baked BBQ Pulled Chicken Breast Recipe

Easy pulled chicken breast starts on the stovetop and finishes in the oven, making it ready for however much barbecue sauce you like in under an hour. No crock pot or slow cooker needed!

Ingredients
  

  • 3 pounds bone-in chicken breast halves with skin
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup chicken broth
  • 1 1/2 cups barbecue sauce plus extra for serving
  • 1 tablespoon brown sugar optional, for added sweetness
  • 1 teaspoon liquid smoke optional, for deeper smoky flavor

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Season the chicken breasts on both sides with salt, pepper, and garlic powder.
  3. Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.
  4. Add the chicken breasts skin-side down and sear for 3-4 minutes until the skin is golden brown and crispy.
  5. Flip the chicken and sear the other side for another 2-3 minutes.
  6. Pour chicken broth around (not over) the chicken breasts.
  7. Cover the skillet with a lid or aluminum foil and transfer to the preheated oven.
  8. Bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
  9. Remove from oven and transfer chicken to a cutting board. Let rest for 5 minutes.
  10. Discard skin and bones, then use two forks to shred the chicken.
  11. Return shredded chicken to the skillet with the cooking juices.
  12. Add barbecue sauce, brown sugar, and liquid smoke (if using). Mix well to combine.
  13. Place back on stovetop over medium heat and simmer for 5 minutes until the sauce thickens slightly and coats the chicken.
