Method
- Preheat your oven to 350°F (175°C).
- Season the chicken breasts on both sides with salt, pepper, and garlic powder.
- Heat olive oil in a large oven-safe skillet or Dutch oven over medium-high heat.
- Add the chicken breasts skin-side down and sear for 3-4 minutes until the skin is golden brown and crispy.
- Flip the chicken and sear the other side for another 2-3 minutes.
- Pour chicken broth around (not over) the chicken breasts.
- Cover the skillet with a lid or aluminum foil and transfer to the preheated oven.
- Bake for 25-30 minutes or until the internal temperature reaches 165°F (74°C).
- Remove from oven and transfer chicken to a cutting board. Let rest for 5 minutes.
- Discard skin and bones, then use two forks to shred the chicken.
- Return shredded chicken to the skillet with the cooking juices.
- Add barbecue sauce, brown sugar, and liquid smoke (if using). Mix well to combine.
- Place back on stovetop over medium heat and simmer for 5 minutes until the sauce thickens slightly and coats the chicken.
