Ingredients

  • 4 pounds pork spareribs
  • 1 cup water
  • 1 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 1/4 cup rum
  • 1/2 cup chile sauce
  • 2 cloves garlic minced
  • 1 teaspoon dry mustard
  • 1 tablespoon paprika
  • 1/2 teaspoon ground black pepper

Method

  1. Preheat your oven to 350°F (175°C). Cut the racks of ribs into serving-sized portions. Remove the thin membrane from the back of the ribs.
  2. Place the ribs in a large baking dish and add 1 cup of water to the bottom. Cover tightly with aluminum foil and bake for 2 hours.
  3. While the ribs are baking, combine brown sugar, ketchup, soy sauce, Worcestershire sauce, rum, chile sauce, garlic, dry mustard, paprika, and black pepper in a medium saucepan. Simmer for about 20 minutes until slightly thickened.
  4. After 2 hours, remove the ribs from the oven. Preheat your grill to medium heat.
  5. Place the ribs on the preheated grill. Brush generously with the BBQ sauce on both sides. Grill for about 3-4 minutes per side, basting with additional sauce when flipping, for about 15-20 minutes total.
  6. Allow the ribs to rest for 5-10 minutes before serving. Serve with the remaining BBQ sauce on the side.
