Method
- Preheat your oven to 350°F (175°C). Cut the racks of ribs into serving-sized portions. Remove the thin membrane from the back of the ribs.
- Place the ribs in a large baking dish and add 1 cup of water to the bottom. Cover tightly with aluminum foil and bake for 2 hours.
- While the ribs are baking, combine brown sugar, ketchup, soy sauce, Worcestershire sauce, rum, chile sauce, garlic, dry mustard, paprika, and black pepper in a medium saucepan. Simmer for about 20 minutes until slightly thickened.
- After 2 hours, remove the ribs from the oven. Preheat your grill to medium heat.
- Place the ribs on the preheated grill. Brush generously with the BBQ sauce on both sides. Grill for about 3-4 minutes per side, basting with additional sauce when flipping, for about 15-20 minutes total.
- Allow the ribs to rest for 5-10 minutes before serving. Serve with the remaining BBQ sauce on the side.
