Method
- Preheat the oven to 350°F (175°C). Line a baking sheet with aluminum foil for easy cleanup.
- Prepare the ribs by removing the membrane from the back (bone side). This helps the flavors penetrate and prevents curling during cooking. Pat the ribs dry with paper towels.
- Place the ribs meat-side up on the prepared baking sheet. Cover tightly with additional foil. Bake for 2 hours, or until the meat begins to pull away from the bones.
- While the ribs are baking, make your sauce. Combine brown sugar, ketchup, soy sauce, Worcestershire sauce, rum, chile sauce, garlic, mustard, and pepper in a medium saucepan.
- Bring sauce to a boil over medium heat, then reduce heat to low and simmer for 15-20 minutes, stirring occasionally until slightly thickened.
- Preheat your grill to medium heat (around 350°F).
- Remove ribs from the oven and carefully transfer to the preheated grill.
- Grill ribs for 15 minutes, basting frequently with the sauce and turning once, until the sauce caramelizes and forms a sticky glaze.
- Remove from grill, cover with foil and let rest for 5-10 minutes before cutting between bones to serve.
