Ingredients

  • 4 pounds pork spareribs
  • 1 cup brown sugar
  • 1/4 cup ketchup
  • 1/4 cup soy sauce
  • 1/4 cup Worcestershire sauce
  • 1/4 cup rum can substitute apple juice
  • 1/2 cup chile sauce
  • 2 cloves garlic crushed
  • 1 teaspoon dry mustard
  • 1/2 teaspoon freshly ground black pepper

Method

  1. Preheat the oven to 350°F (175°C). Line a baking sheet with aluminum foil for easy cleanup.
  2. Prepare the ribs by removing the membrane from the back (bone side). This helps the flavors penetrate and prevents curling during cooking. Pat the ribs dry with paper towels.
  3. Place the ribs meat-side up on the prepared baking sheet. Cover tightly with additional foil. Bake for 2 hours, or until the meat begins to pull away from the bones.
  4. While the ribs are baking, make your sauce. Combine brown sugar, ketchup, soy sauce, Worcestershire sauce, rum, chile sauce, garlic, mustard, and pepper in a medium saucepan.
  5. Bring sauce to a boil over medium heat, then reduce heat to low and simmer for 15-20 minutes, stirring occasionally until slightly thickened.
  6. Preheat your grill to medium heat (around 350°F).
  7. Remove ribs from the oven and carefully transfer to the preheated grill.
  8. Grill ribs for 15 minutes, basting frequently with the sauce and turning once, until the sauce caramelizes and forms a sticky glaze.
  9. Remove from grill, cover with foil and let rest for 5-10 minutes before cutting between bones to serve.
