Ingredients

  • 4 pounds pork spareribs
  • 1 tablespoon garlic powder
  • 1 teaspoon black pepper
  • 2 tablespoons salt
  • 1 tablespoon paprika
  • 1 cup ketchup
  • ½ cup brown sugar packed
  • ¼ cup white vinegar
  • 2 tablespoons dark rum
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1 teaspoon liquid smoke optional
  • ½ teaspoon garlic powder
  • ¼ teaspoon cayenne pepper adjust to taste

Method

  1. Preheat the oven to 350°F (175°C).
  2. Remove the membrane from the back of the ribs. This allows for better flavor penetration and more tender ribs.
  3. In a small bowl, mix garlic powder, black pepper, salt, and paprika to create a dry rub.
  4. Coat both sides of the ribs generously with the dry rub mixture, pressing it into the meat.
  5. Place the ribs on a baking sheet lined with aluminum foil, meat side up.
  6. Cover tightly with another sheet of foil and bake for 2 hours and 30 minutes. The meat should be tender and nearly falling off the bone.
  7. While the ribs are baking, prepare the BBQ sauce by combining all sauce ingredients in a medium saucepan. Bring to a simmer over medium heat, then reduce heat to low and cook for 15 minutes, stirring occasionally. Remove from heat and set aside.
  8. Preheat your grill to medium-high heat.
  9. Transfer the baked ribs to the grill and brush generously with the BBQ sauce.
  10. Grill the ribs for 5-7 minutes on each side, basting with more sauce each time you flip them, until the sauce is sticky and caramelized.
  11. Remove from the grill and let rest for 5 minutes before cutting into individual ribs.
  12. Serve with the remaining BBQ sauce on the side.
