Ingredients
  

  • 1 12-inch pre-baked pizza crust
  • 1 cup cooked chicken breast diced
  • 3/4 cup barbecue sauce divided
  • 1 tablespoon olive oil
  • 1/2 red onion thinly sliced
  • 1/4 cup pepperoncini peppers sliced
  • 2 cups Colby-Jack cheese shredded
  • 1/4 cup fresh cilantro chopped
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Red pepper flakes optional, for heat

Method
 

  1. Preheat your oven to 350°F (175°C). If using a pizza stone, place it in the oven while preheating.
  2. In a medium bowl, toss the diced chicken with 1/4 cup of barbecue sauce until well coated. Set aside.
  3. Place your pre-baked pizza crust on a pizza pan or baking sheet. Brush the olive oil around the outer edge of the crust.
  4. Spread the remaining 1/2 cup of barbecue sauce evenly over the crust, leaving a 1/2-inch border around the edge.
  5. Sprinkle half of the cheese over the sauce layer.
  6. Distribute the barbecue chicken, sliced red onion, and pepperoncini peppers evenly across the pizza.
  7. Sprinkle with garlic powder and black pepper, then top with the remaining cheese.
  8. Bake for 12-15 minutes, or until the cheese is melted and bubbly and the crust is golden brown.
  9. Remove from oven and immediately sprinkle with fresh cilantro and red pepper flakes if desired.
  10. Allow to cool for 2-3 minutes before slicing and serving.
