Method
- Preheat your oven to 350°F (175°C). If using a pizza stone, place it in the oven while preheating.
- In a medium bowl, toss the diced chicken with 1/4 cup of barbecue sauce until well coated. Set aside.
- Place your pre-baked pizza crust on a pizza pan or baking sheet. Brush the olive oil around the outer edge of the crust.
- Spread the remaining 1/2 cup of barbecue sauce evenly over the crust, leaving a 1/2-inch border around the edge.
- Sprinkle half of the cheese over the sauce layer.
- Distribute the barbecue chicken, sliced red onion, and pepperoncini peppers evenly across the pizza.
- Sprinkle with garlic powder and black pepper, then top with the remaining cheese.
- Bake for 12-15 minutes, or until the cheese is melted and bubbly and the crust is golden brown.
- Remove from oven and immediately sprinkle with fresh cilantro and red pepper flakes if desired.
- Allow to cool for 2-3 minutes before slicing and serving.
