- In a large skillet over medium heat, combine bourbon, garlic, and onion. Simmer until the onion becomes translucent and fragrant, about 10 minutes.
- Add ketchup, apple cider vinegar, Worcestershire sauce, brown sugar, maple syrup, and liquid smoke (if using). Stir to combine thoroughly.
- Mix in smoked paprika, black pepper, cayenne pepper, and salt. Stir well to ensure all ingredients are fully incorporated.
- Reduce heat to low and simmer uncovered for 20-25 minutes, stirring occasionally to prevent sticking. The sauce will thicken as it reduces.
- Remove from heat and let cool slightly. For a smoother consistency, transfer to a blender and pulse until desired smoothness is achieved (optional).
- Allow the sauce to cool completely before transferring to airtight containers or mason jars.
