Ingredients
  

  • 1 3 pound boneless chuck roast
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon salt
  • 1 tablespoon olive oil for searing, optional
  • 1 medium onion sliced
  • 1 1/2 cups barbecue sauce your favorite brand
  • 1/4 cup beef broth
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar

Method
 

  1. Mix the garlic powder, onion powder, salt, and pepper in a small bowl. Rub this seasoning mixture all over the chuck roast.
  2. Optional but recommended: Heat olive oil in a large skillet over medium-high heat. Sear the seasoned roast on all sides until nicely browned (about 2-3 minutes per side). This step adds amazing flavor!
  3. Place the sliced onions in the bottom of your slow cooker.
  4. Set the seared pot roast on top of the onions.
  5. In a bowl, whisk together the barbecue sauce, beef broth, Worcestershire sauce, and brown sugar. Pour this mixture over the roast.
  6. Cover and cook on LOW for 6-8 hours or on HIGH for 4-5 hours, until the meat is fork-tender and easily shreds.
  7. Once cooked, carefully transfer the roast to a cutting board. Shred the meat using two forks, removing any fat.
  8. Return the shredded meat to the slow cooker and mix with the sauce. Let it cook for an additional 15-30 minutes to absorb the flavors.
