Method
- Mix the garlic powder, onion powder, salt, and pepper in a small bowl. Rub this seasoning mixture all over the chuck roast.
- Optional but recommended: Heat olive oil in a large skillet over medium-high heat. Sear the seasoned roast on all sides until nicely browned (about 2-3 minutes per side). This step adds amazing flavor!
- Place the sliced onions in the bottom of your slow cooker.
- Set the seared pot roast on top of the onions.
- In a bowl, whisk together the barbecue sauce, beef broth, Worcestershire sauce, and brown sugar. Pour this mixture over the roast.
- Cover and cook on LOW for 6-8 hours or on HIGH for 4-5 hours, until the meat is fork-tender and easily shreds.
- Once cooked, carefully transfer the roast to a cutting board. Shred the meat using two forks, removing any fat.
- Return the shredded meat to the slow cooker and mix with the sauce. Let it cook for an additional 15-30 minutes to absorb the flavors.
