- Trim any excess fat from the chuck roast, leaving some for flavor and moisture.
- In a small bowl, combine garlic powder, onion powder, salt, and pepper. Rub this seasoning mixture all over the roast, pressing it into the meat.
- Optional but recommended: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Sear the seasoned roast on all sides until browned (about 2-3 minutes per side). This step enhances flavor through caramelization.
- Place the seasoned (and optionally seared) chuck roast in your slow cooker.
- In a medium bowl, mix barbecue sauce, brown sugar (if using), Worcestershire sauce, and apple cider vinegar until well combined.
- Pour the sauce mixture over the roast, ensuring it's well coated.
- Cover and cook on LOW for 6-8 hours or on HIGH for 4-5 hours, until the meat is fork-tender and easily shreds.
- Remove the roast to a cutting board and shred using two forks, discarding any large pieces of fat.
- Skim excess fat from the sauce in the slow cooker if desired.
- Return the shredded meat to the slow cooker and stir to coat with the sauce. Let it warm through for 15-20 minutes before serving.
