  • 1 3 pound boneless chuck roast
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 cups high-quality bottled barbecue sauce
  • 1/4 cup brown sugar optional, for extra sweetness
  • 1 tablespoon Worcestershire sauce for depth of flavor
  • 1 tablespoon apple cider vinegar adds tanginess

Method
 

  1. Trim any excess fat from the chuck roast, leaving some for flavor and moisture.
  2. In a small bowl, combine garlic powder, onion powder, salt, and pepper. Rub this seasoning mixture all over the roast, pressing it into the meat.
  3. Optional but recommended: Heat 1 tablespoon of oil in a large skillet over medium-high heat. Sear the seasoned roast on all sides until browned (about 2-3 minutes per side). This step enhances flavor through caramelization.
  4. Place the seasoned (and optionally seared) chuck roast in your slow cooker.
  5. In a medium bowl, mix barbecue sauce, brown sugar (if using), Worcestershire sauce, and apple cider vinegar until well combined.
  6. Pour the sauce mixture over the roast, ensuring it's well coated.
  7. Cover and cook on LOW for 6-8 hours or on HIGH for 4-5 hours, until the meat is fork-tender and easily shreds.
  8. Remove the roast to a cutting board and shred using two forks, discarding any large pieces of fat.
  9. Skim excess fat from the sauce in the slow cooker if desired.
  10. Return the shredded meat to the slow cooker and stir to coat with the sauce. Let it warm through for 15-20 minutes before serving.
