- Combine olive oil, hot sauce, minced garlic, honey, smoked paprika, and cayenne pepper in a food processor. Blend until smooth.
- Place the shrimp in a large bowl and pour the marinade over them. Toss to coat well, cover, and refrigerate for 15 to 30 minutes.
- Preheat the grill to high heat, about 450°F. Clean and oil the grates.
- Remove the shrimp from the marinade and thread them onto skewers, spacing them evenly and alternating direction for stability.
- Season the shrimp with salt and black pepper. Grill for 2 to 3 minutes per side, basting with reserved marinade, until pink, opaque, and lightly charred.
- Transfer the skewers to a platter, sprinkle with chopped fresh cilantro, and serve immediately.
