Ingredients
  

  • 10 pork spareribs about 3-4 pounds
  • Water enough to cover ribs in pot
  • 1/4 cup soy sauce
  • 1 bunch fresh parsley chopped and divided
  • 6 cloves garlic minced
  • Juice of 2 fresh limes
  • 2 sprigs fresh rosemary or 1 tablespoon dried
  • 1 tablespoon dried oregano
  • 3 bay leaves
  • Salt and freshly ground black pepper to taste

Method
 

  1. Prepare the ribs: Rinse the spareribs under cold water and pat dry with paper towels. If desired, trim excess fat. Cut into individual ribs for easier handling.
  2. Arrange in cooking pot: Place the spareribs into a large pot and add just enough water to cover them completely.
  3. Add flavorings: Pour in the soy sauce, add 3/4 of the chopped parsley (reserve the rest for garnish), minced garlic, lime juice, rosemary sprigs, oregano, and bay leaves. Season with salt and pepper to taste.
  4. Bring to a boil: Place the pot over medium-high heat and bring the liquid to a boil.
  5. Simmer until tender: Once boiling, reduce heat to medium-low and simmer uncovered. Allow the ribs to cook until the water has completely evaporated, approximately 25-30 minutes. This slow cooking process tenderizes the meat while infusing it with flavor.
  6. Caramelize the ribs: Once the liquid has evaporated, the ribs will begin to sizzle in their own rendered fat. Continue cooking for another 5-10 minutes, turning occasionally, until they develop a beautiful caramelized exterior.
  7. Garnish and serve: Transfer the ribs to a serving platter, sprinkle with the remaining fresh parsley, and serve hot.
