Ingredients
  

  • 1 12-inch pre-baked pizza crust (or homemade pizza dough)
  • 1 cup barbecue sauce use your favorite brand, divided
  • 2 boneless skinless chicken breasts, cooked and diced
  • 1/3 cup red onion thinly sliced
  • 1/4 cup pepperoncini peppers sliced
  • 2 cups Colby-Jack cheese shredded
  • 1/4 cup fresh cilantro chopped
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste

Method
 

  1. Preheat your oven to 425°F (220°C). If using a pizza stone, place it in the oven while preheating.
  2. In a medium bowl, toss the diced chicken with 1/4 cup of barbecue sauce until well coated.
  3. If using a pre-baked crust, place it on a baking sheet. For homemade dough, roll it out to a 12-inch circle on a floured surface and transfer to a pizza peel or baking sheet dusted with cornmeal.
  4. Brush the outer edge of the crust with olive oil and sprinkle with garlic powder for extra flavor.
  5. Spread the remaining barbecue sauce evenly over the crust, leaving a 1-inch border around the edge.
  6. Distribute the barbecue chicken evenly over the sauce.
  7. Sprinkle the sliced red onion and pepperoncini peppers over the chicken.
  8. Evenly cover the pizza with shredded Colby-Jack cheese.
  9. Bake for 12-15 minutes, until the crust is golden brown and the cheese is bubbly and slightly browned.
  10. Remove from the oven and immediately sprinkle with fresh cilantro.
  11. Allow the pizza to cool for 2-3 minutes before slicing and serving.
