- In a large saucepan over medium heat, brown the ground beef, breaking it up with a wooden spoon until no longer pink, about 5-7 minutes. Drain excess fat.
- Add the diced onion to the beef and cook until translucent, about 3 minutes. Add garlic and cook for an additional 30 seconds until fragrant.
- In the same pan, add ketchup, water, white sugar, brown sugar, vinegar, mustard, salt, pepper, and paprika. Whisk everything together until well combined.
- Bring the mixture to a simmer over medium-high heat, then reduce heat to medium-low and let it simmer for 15-20 minutes, stirring occasionally, until the sauce thickens and flavors meld together.
- Taste and adjust seasonings if needed, adding more sugar for sweetness or vinegar for tanginess.
- Serve the BBQ beef generously piled on toasted hamburger buns. Top with pickles and coleslaw if desired.
