Ingredients

  • 4 pounds pork spareribs
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon paprika
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 cup ketchup
  • 1/4 cup brown sugar packed
  • 1/4 cup dark rum optional but recommended
  • 3 tablespoons Worcestershire sauce
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon molasses
  • 1 teaspoon liquid smoke optional
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper

Method

  1. Preheat your oven to 350°F (175°C). Remove the thin membrane from the back of the ribs by sliding a knife under it and then pulling it off with a paper towel.
  2. In a small bowl, mix together the garlic powder, onion powder, paprika, salt, and black pepper. Rub this seasoning mixture generously all over both sides of the ribs, pressing it into the meat.
  3. Place the seasoned ribs on a baking sheet lined with aluminum foil, bone side down. Cover tightly with another sheet of foil. Bake in the preheated oven for 2 hours or until the meat is tender but not falling apart.
  4. While the ribs are baking, make the sauce by combining all sauce ingredients in a saucepan. Bring to a simmer over medium heat, then reduce heat to low and cook for 15-20 minutes, stirring occasionally until the sauce thickens slightly. Remove from heat and set aside.
  5. Preheat your grill to medium heat. Remove the ribs from the oven and carefully transfer them to the grill. Brush generously with the BBQ sauce and grill for 3-4 minutes. Flip the ribs, baste again with sauce, and grill for another 3-4 minutes until the sauce caramelizes and creates a sticky glaze.
  6. Remove the ribs from the grill and apply one final coating of BBQ sauce. Let them rest for 5-10 minutes before slicing between the bones to serve.
