- Drain and rinse the jackfruit. Remove any seeds or tough cores, then shred with two forks until it resembles pulled meat.
- Heat oil in a skillet over medium heat. Add sliced onions and sauté until translucent and lightly caramelized. Remove and set aside.
- Add shredded jackfruit to the skillet. Sprinkle with smoked paprika, garlic powder, and onion powder. Cook for about 5 minutes, stirring to coat evenly.
- Add BBQ sauce, apple cider vinegar, and maple syrup. Reduce heat to low and simmer 10–15 minutes until thickened and absorbed.
- Preheat oven to 350°F (175°C). Toast buns cut-side up for about 5 minutes until golden.
- Pile BBQ jackfruit onto buns. Top with sautéed onions and coleslaw. Add top bun and serve warm.
